Creamy Avocado Soup
Did you know avocados are classified as a fruit and one of the top superfoods you should add to your diet?! I knew there was a reason I loved guacamole:)
Avocados are a high oxidant food that promotes health vision, skin, hair and can event fight cancer. In addition eating foods rich in avocados can improve your heart health and lower your risk for metabolic syndrome. What a powerful green ingredient that can be prepared in a number of delicious ways!
I've added avocados to smoothies, mexican dishes, and sandwiches, but this is my first time creating a soup! Perfect for any season and definitely filling on a cold dreary winter day, avocado soup will be a repeat in my kitchen.
- 3 cups vegetable broth
- 3 mashed large avacados
- 2/3 cup greek yogurt
- juice from 1 lime
- 1 Tbsp chopped fresh parsley
- salt and pepper
- pio de gallo for topping
- crushed tortilla chips for topping
- Mix all ingredient in soup pot, bring to boil, Then reduce heat and simmer for 10 minutes. Stir to blend smoothly.
- Serve warm topped with pica de gallo and chips!
